- 4 large potatoes, peeled and diced

- 4 cups chicken broth
- 1 cup shredded cheddar cheese

- 4 slices cooked bacon, crumbled

- Salt and pepper to taste
Instructions
- Place potatoes, onion, garlic, and chicken broth in crock pot.
- Cook on low for 6-8 hours until potatoes are tender.
- Use an immersion blender to blend until smooth or leave slightly chunky.
- Stir in shredded cheese and sour cream until melted and creamy.
- Top with bacon and chives before serving.

- For a thicker soup, add an extra potato or reduce the broth.
- Can be garnished with additional cheese or sour cream as desired.
