Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons ground cinnamon
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
  5. Gradually add dry ingredients to wet mixture, mixing until combined.
  6. Mix cinnamon and remaining sugar in a small bowl.
  7. Shape dough into 1.5-inch balls, roll in cinnamon-sugar, and place on prepared baking sheets.
  8. Bake for 10-12 minutes until edges are set but centers stay soft.
  9. Allow cookies to cool slightly before transferring to wire racks.
