Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
- Gradually add dry ingredients to wet mixture, mixing until combined.
- Mix cinnamon and remaining sugar in a small bowl.
- Shape dough into 1.5-inch balls, roll in cinnamon-sugar, and place on prepared baking sheets.
- Bake for 10-12 minutes until edges are set but centers stay soft.
- Allow cookies to cool slightly before transferring to wire racks.
