- 2 tbsp olive oil
- 1 lb cremini mushrooms, finely chopped
- 2 shallots, minced
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Season beef with salt and pepper. Sear in hot oil until browned on all sides. Let cool.
- Cook mushrooms, shallots, and garlic in butter until moisture evaporates to form duxelles. Cool.
- Spread mushroom mixture over beef, then wrap with puff pastry, sealing edges.
- Brush with egg wash, cut slits for steam release. Bake at 400°F for 25-30 minutes until golden.

- Ensure beef is at room temperature before searing for even cooking.
- Chill wrapped beef before baking for a crisper pastry.
