- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 8 lasagna noodles, broken into pieces
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- In a large pot, cook the ground beef over medium heat until browned. Add chopped onion and garlic; cook until softened.
- Add crushed tomatoes, beef broth, dried oregano, basil, salt, and pepper. Bring to a boil.
- Stir in broken lasagna noodles and reduce heat. Simmer until noodles are tender, about 10 minutes.
- Ladle soup into bowls, sprinkle with mozzarella and Parmesan cheeses, and garnish with fresh basil. Serve hot.
Notes
- You can substitute ground turkey or chicken for beef for a leaner version.
- For a vegetarian option, use vegetable broth and add sautéed vegetables.
