- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 3 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 3 teaspoons vanilla bean paste
- 1/4 cup brown butter, cooled
- 3 eggs
- 1/2 cup sour cream
- Vegetable oil or cooking spray for greasing
Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a greased 9-inch springform pan. Bake for 10 minutes, then cool.
- In a large bowl, beat cream cheese and sugar until smooth. Mix in vanilla bean paste and cooled brown butter.
- Add eggs one at a time, blending well after each. Stir in sour cream.
- Pour filling over crust and bake for 50-60 minutes until set. Cool completely before chilling for at least 4 hours.
- Before serving, drizzle with brown butter caramel and garnish with vanilla beans if desired.
