- 4 large sweet potatoes, peeled and cubed
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Salt to taste
- 1 cup mini marshmallows
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 375°F (190°C).
- Boil sweet potatoes until tender, about 15 minutes. Drain and mash in a large bowl.
- Add melted butter, brown sugar, milk, vanilla, and salt to the mashed sweet potatoes and mix until smooth.
- Transfer the mixture to a baking dish and spread evenly.
- Sprinkle mini marshmallows and chopped pecans on top.
- Bake for 20-25 minutes until marshmallows are golden and toasted.
Notes
- For extra flavor, add a teaspoon of cinnamon or nutmeg to the mixture.
- Can be prepared a day ahead and baked before serving.
