Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

- Brush zucchini slices lightly with olive oil, then coat evenly in the breadcrumb mixture.
- Arrange coated zucchini slices on the prepared baking sheet in a single layer.
- Bake for 15-20 minutes until golden and crispy.
