- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- 2 tablespoons olive oil
Instructions

- In a mixing bowl, combine zucchini, finely chopped onion, minced garlic, flour, eggs, Parmesan, salt, pepper, and paprika.
- Mix until well combined.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet and flatten slightly.
- Cook for 3-4 minutes per side until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with lemon wedges or a dipping sauce.
Notes
- Ensure excess moisture is squeezed out to prevent soggy fritters.
- You can add chopped herbs like parsley or dill for extra flavor.
- For a healthier option, bake at 400°F (200°C) for 15-20 minutes instead of frying.
