- 4 salmon fillets
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Lemon slices for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Slice a pocket into each salmon fillet and season with salt and pepper.
- In a bowl, mix chopped spinach, feta, garlic, and 1 tablespoon olive oil.
- Stuff each fillet with the spinach and feta mixture.
- Place on a baking sheet lined with parchment paper, drizzle with remaining olive oil.
- Bake for 15-20 minutes until salmon is cooked through and flaky.
- Garnish with lemon slices and serve hot.
Notes
- Ensure not to overstuff the fillets to prevent spilling during baking.
- Best served with a side of roasted vegetables or a light salad.
