- 2 cups cooked and shredded BBQ chicken
- 2 large flour tortillas
- 1 cup shredded cheese (cheddar, Monterey Jack, or mozzarella)
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped red onion
- Optional: sour cream and salsa for serving
Instructions
- Lay one tortilla flat on a skillet over medium heat.
- Sprinkle half of the cheese evenly over the tortilla.
- Spread the shredded BBQ chicken over the cheese.
- Top with chopped cilantro, red onion, and the remaining cheese.
- Cover with the second tortilla and cook until the cheese melts and the tortilla is golden brown, about 3-4 minutes per side.
- Slice into wedges and serve with sour cream and salsa.

- Use leftover or rotisserie BBQ chicken for quick prep.
- For extra flavor, add sliced jalapenos or BBQ sauce inside.
