- 1 cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar (optional for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix flour and sugar in a bowl. In another bowl, whisk together melted butter, sour cream, eggs, and vanilla.
- Combine wet and dry ingredients; fold in blueberries.
- In a separate bowl, beat cream cheese until smooth, then add powdered sugar if using.
- Pour half of the batter into the pan, spread cream cheese evenly, then top with remaining batter.
- Bake for 50-60 minutes until golden and a toothpick comes out clean.
- Allow to cool before slicing. Optional: dust with powdered sugar.
Notes
- Use fresh blueberries for best flavor. Frozen can be used but thaw and drain excess moisture.
- Ensure the cream cheese layer is smooth for even swirls.
- Serve warm or at room temperature, with butter or extra blueberries.
