- 2 cups cooked shredded chicken
- 1/2 cup BBQ sauce
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup sliced bell peppers
- 1/2 cup sliced red onions
- 1 tablespoon olive oil
- Fresh cilantro for garnish
Instructions
- In a bowl, toss the shredded chicken with BBQ sauce until well coated.
- Heat a skillet over medium heat and add olive oil. Sauté bell peppers and onions until tender.
- Warm the tortillas in a dry skillet or microwave.
- Spread BBQ chicken on each tortilla, add sautéed vegetables, and sprinkle with shredded cheese.
- Roll up the tortillas tightly and place in the skillet to lightly sear for 1-2 minutes per side, until cheese is melted and wraps are crispy.
- Slice in half and garnish with fresh cilantro. Serve warm.
Notes
- Use rotisserie chicken for added convenience.
- Adjust BBQ sauce to taste for more or less smoky flavor.
- For a healthier version, use whole wheat tortillas and reduced-fat cheese.
