- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup finely chopped pistachios
- Green food coloring (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together butter and powdered sugar until light and fluffy.
- Add vanilla extract and a few drops of green food coloring, mix well.
- In a separate bowl, whisk together flour and baking powder.
- Gradually add dry ingredients to wet mixture, mixing until combined.
- Fold in chopped pistachios.
- Form dough into small balls and place on baking sheet, flatten slightly.
- Bake for 12-15 minutes until edges are lightly golden.
- Allow cookies to cool on a wire rack before serving.
Notes
- You can add more or less pistachios based on preference.
- Coloring is optional but adds a festive touch for spring.
- Store in an airtight container for up to 5 days.
