- 2 large sweet potatoes, cubed
- 1 lb boneless, skinless chicken breasts, diced
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups mixed greens
- 1 avocado, sliced
- 1/4 cup feta cheese (optional)
- Fresh herbs for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Roast for 25-30 minutes.
- Season chicken with salt, pepper, and a little paprika. Cook in a skillet with 1 tbsp olive oil until browned and cooked through, about 8-10 minutes.
- Assemble bowls by placing greens at the base, topping with roasted sweet potatoes and chicken. Garnish with avocado slices, feta, and herbs. Serve immediately.

- Can substitute grilled chicken for roasted for quicker prep.
- Add a squeeze of lemon for extra fresh flavor.
