Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste

  • 1 avocado, sliced
  • 1/4 cup feta cheese (optional)
  • Fresh herbs for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Roast for 25-30 minutes.
  2. Season chicken with salt, pepper, and a little paprika. Cook in a skillet with 1 tbsp olive oil until browned and cooked through, about 8-10 minutes.
  3. Assemble bowls by placing greens at the base, topping with roasted sweet potatoes and chicken. Garnish with avocado slices, feta, and herbs. Serve immediately.
