- 1 packet taco seasoning or homemade blend
- 1 cup chicken broth
- 8 small tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheese
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Place chicken breasts or thighs in the slow cooker and sprinkle with taco seasoning.
- Add chicken broth and cook on low for 6-8 hours or until chicken is shredded easily.
- Remove chicken and shred with two forks, then return to slow cooker to absorb flavors.
- Warm tortillas and fill with shredded chicken, then top with lettuce, tomatoes, cheese, and cilantro. Serve with lime wedges.
