Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss sweet potatoes and carrots with olive oil, salt, pepper, paprika, and thyme.
- Spread evenly on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes, flipping halfway, until vegetables are tender and caramelized.
- Garnish with chopped parsley and serve warm.

- Adjust seasoning to taste. Add a drizzle of honey for extra sweetness or a dash of chili powder for heat.
