- 1 lb ground beef or stew meat
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz), drained
- 1 can black beans (15 oz), drained
- 1 cup corn kernels
- 1 bell pepper, chopped
- 4 cups beef or vegetable broth
- 1 tsp smoked paprika
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a large pot, cook ground beef or stew meat over medium heat until browned. Drain excess fat.
- Add chopped onion and garlic; cook until softened.
- Stir in diced tomatoes, beans, corn, bell pepper, broth, smoked paprika, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
- Serve hot, garnished with fresh herbs if desired.
Notes
- You can substitute ground turkey or chicken for beef.
- Adjust spices to taste for more heat or smokiness.
