- 1 whole turkey (12-14 pounds)
- 1/4 cup olive oil
- 2 tbsp salt
- 1 tbsp black pepper
- 3 tbsp fresh thyme, chopped
- 3 tbsp fresh rosemary, chopped
- 4 garlic cloves, minced
- 1 lemon, sliced
- Fresh herbs for garnish
Instructions
- Preheat oven to 325°F (165°C).
- Rub the turkey with olive oil, salt, pepper, herbs, and minced garlic, making sure to season inside the cavity as well.
- Stuff lemon slices inside the cavity.
- Place turkey on a roasting pan and roast uncovered for about 13-15 minutes per pound, or until internal temperature reaches 165°F (74°C).
- Let rest for 20 minutes before carving. Garnish with fresh herbs and serve.

- Ensure the turkey is fully thawed before roasting.
- Baste periodically for crispy skin.
