- 4 bone-in chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1/4 cup unsalted butter
- 1 pound green beans, trimmed
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a skillet over medium heat. Cook chicken thighs until golden brown and cooked through, about 6-8 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and cook until fragrant, about 1 minute.
- Add lemon juice and butter, stirring until melted and combined.
- Return chicken to the skillet, spoon sauce over top, and simmer for 2 minutes.
- Meanwhile, steam or sauté green beans until tender, about 4-5 minutes.
- Serve chicken with green beans, garnished with parsley.
Notes
- For extra flavor, add a pinch of red pepper flakes during cooking.
- Can be made with boneless chicken breasts as a substitute.
