- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, cold
- 1 cup fresh cranberries
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine flour and powdered sugar. Cut in butter until mixture resembles coarse crumbs. Press into a greased 9×9 inch baking dish and bake for 15 minutes.
- Meanwhile, in a saucepan, combine cranberries, sugar, lemon juice, lemon zest, and cornstarch. Cook over medium heat until cranberries burst and filling thickens, about 10 minutes.
- Pour the cranberry filling over the pre-baked crust. Return to oven and bake for another 20 minutes, until filling is bubbly.
- Cool completely before slicing into squares. Garnish with additional lemon zest or cranberries if desired.
Notes
- Use fresh cranberries for the best flavor.
- Chill the bars before serving for neater slices.
