Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, cold
  • 1 cup fresh cranberries
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour and powdered sugar. Cut in butter until mixture resembles coarse crumbs. Press into a greased 9×9 inch baking dish and bake for 15 minutes.
  2. Meanwhile, in a saucepan, combine cranberries, sugar, lemon juice, lemon zest, and cornstarch. Cook over medium heat until cranberries burst and filling thickens, about 10 minutes.
  3. Pour the cranberry filling over the pre-baked crust. Return to oven and bake for another 20 minutes, until filling is bubbly.
  4. Cool completely before slicing into squares. Garnish with additional lemon zest or cranberries if desired.
